20170719_215029Well I am on my health kick again. After my mom passing I have gained 10 pounds of stress weight and it’s time to knock it off. I have a work out plan and now it’s time to do what counts the most. Cook!

I found this delicious recipe on pinterest and I must say, it was delicious. So it’s a pinterest win! Low fat and high in protein is the way to go, not to mention it actual taste good.

Prep Time 30 mins

Indegredients:

2 chicken Breast

1/2 Cup of Italian bread crumbs

1/2 of flour

8 table spoons of butter ( Divided)

Minced Garlic

Zucchini

Grated Parmesan Cheese

Prep:

Slice your zucchini thin, mix in a shallow bowl the flour, bread crumbs, and cheese. Melt 4 tablespoons of butter in a shallow bowl. Heat skillet on medium with 2 tablespoons of butter. Dip chicken in butter and then in bread crumbs and place in skillet, cook about 4 mins on each side or until fully cooked. Get out and place on separate plate. Put 2 more tablespoons of butter back in skillet with minced garlic, add zucchini. Let cook until tender. Add chicken back in skillet and sprinkle all with about 1 to 2 tablespoons of parmesan cheese.
